This exotic coffee was grown by Felipe Arcila at the farm Jardines Del Eden. It was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22 degrees celsius. Then the whole cherries are placed on raised beds until below 11% moisture content is achieved.
This micro-lot is 100% Papayo. This varietal is a rare mutation that took place in Acevedo, Huila. Ripe cherries turn orange in colour and the shape is similar to Papaya. This is the perfect summer coffee that you can enjoy on those warm mornings and hot afternoons. We were lucky enough to get our hands on this mirco-lot, so we hope you enjoy this coffee as much as we do.
